Sourdough bread based on a recipe devised from Panis Quadratus, the carbonized loaves excavated from an oven in Pompeii, Italy. Includes fennel seeds which give it a distinctive flavour – 😋
This loaf is not exactly as the instructions, as we didn’t have any suitable string which was used to create individual sections which could be broken off.
This year’s Christmas baking. Not all my daughter’s work this time. I was brieflypromoted from KitchenAssistant to Assistant Chef so I could make the chocolate log. Though I notice that I was quickly demoted back to the washing up as soon as the chocolate log was finished.
A cute little gingerbread house, melt in the mouth mince pies, with home made fruit mince. Tastes so much better than shop bought. As we had forgotten to get suet the fruit mince was made with grated unsalted butter. Worked beautifully. Apparently, if using the mince immediately there is no need to put brandy in, maybe not but it went in anyway.
Chocolate log, not with holly leaves this year, I don’t think the Queensland climate suits holly. So leaves from my garden more in keeping with the location. Banksia, paw paw and mock orange leaves. I’d forgotten about the problem of the icing melting in Queensland, had to chill it part way through, note – try extra icing sugar next year.
